How to use and store
Keep the bottle in a cupboard — cool, dark, away from the stove. Once opened, use it within a couple of months: fresh extra virgin is at its best young, and because we bottle to order, the clock starts with you, not in a warehouse.
And yes, you can cook with it. Good extra virgin is more stable when heated than most seed oils; the myth says otherwise but the science does not. Sear, roast, finish. Save the most peppery pours for bread, salads and soups. The full guide is on our blog.
Harvest and production
We harvest in October and November, when the fruit is still green and gives the most aroma. The olives are pressed within hours of picking, the same day. The oil then rests in steel tanks under nitrogen, where it cannot oxidise, and is filled into bottles only when it is about to ship. Small quantities, one farm, no shortcuts. Certified organic and inspected every year.
