Ulìa Extra Virgin Olive Oil
An elegant blend of autochthonous varieties of Buža and Rošinjola, with fine, encompassing aromas of Mediterranean herbs dominated by fresh mint and basil with notes of wild radicchio. Balanced bitterness and spiciness, with hints of green almond in the aftertaste.

Food pairings
With its fresh aroma and harmonious taste, it goes well with almost all dishes - from salad, legumes to fish and meat dishes. Wonderful in combination with goat cheese. A few drops will complement mushroom or pumpkin soups.

How to use and store
Keep the bottle in a cupboard — cool, dark, away from the stove. Once opened, use it within a couple of months: fresh extra virgin is at its best young, and because we bottle to order, the clock starts with you, not in a warehouse.
And yes, you can cook with it. Good extra virgin is more stable when heated than most seed oils; the myth says otherwise but the science does not. Sear, roast, finish. Save the most peppery pours for bread, salads and soups. The full guide is on our blog.
Harvest and production
We harvest in October and November, when the fruit is still green and gives the most aroma. The olives are pressed within hours of picking, the same day. The oil then rests in steel tanks under nitrogen, where it cannot oxidise, and is filled into bottles only when it is about to ship. Small quantities, one farm, no shortcuts.

Everything in this shop is grown, pressed, blended and packed by our family in Bale, Istria. The oils rest under nitrogen and are bottled only when you order; the teas are blended by hand in small batches. And if you are ever in Istria — come taste before you buy. Tastings at the farm are free.
