Roʃmarin — Olive Oil with Natural Rosemary Oil
Rosemary and olive oil have kept each other company in Istrian kitchens for as long as anyone can remember. Roʃmarin is our version: our olive oil aromatised with natural rosemary oil — herbaceous and resinous, with that unmistakable Mediterranean pine-and-herb character.
It was made for roasted potatoes, lamb and other roasts, and vegetables straight from the oven. Brush it over focaccia after baking, or use it to start a marinade. A little goes a long way.
The same oil we press each autumn, now carrying the scent of Istrian hillsides.
No additives, no artificial aromas — just our oil and the natural oil of rosemary.

How to use and store
Keep the bottle in a cupboard — cool, dark, away from the stove. Once opened, use it within a couple of months: fresh extra virgin is at its best young, and because we bottle to order, the clock starts with you, not in a warehouse.
And yes, you can cook with it. Good extra virgin is more stable when heated than most seed oils; the myth says otherwise but the science does not. Sear, roast, finish. Save the most peppery pours for bread, salads and soups. The full guide is on our blog.
Harvest and production
We harvest in October and November, when the fruit is still green and gives the most aroma. The olives are pressed within hours of picking, the same day. The oil then rests in steel tanks under nitrogen, where it cannot oxidise, and is filled into bottles only when it is about to ship. Small quantities, one farm, no shortcuts.

Orders are dispatched from the farm within 1-2 working days, tracked, across the EU. Unopened products can be returned within 14 days of delivery; if anything arrives damaged, write to info@perdisacca.com and we will make it right.

Everything in this shop is grown, pressed, blended and packed by our family in Bale, Istria. The oils rest under nitrogen and are bottled only when you order; the teas are blended by hand in small batches. And if you are ever in Istria — come taste before you buy. Tastings at the farm are free.
